This holiday cinnamon toasting bread is a lightly sweetened bread machine loaf made with warm spices, restrained sugar, and small pieces of dried fruit. It is designed for slicing, toasting, and buttering rather than as a cake-like sweet bread.

Ingredients

Liquids and Fats

  • 3/4 cup warm milk about 110°F, or 175 ml water plus 17 g milk powder
  • 2 tablespoons unsalted butter softened

Spice Blend

  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground ginger
  • Optional: finely grated zest of 1/4 to 1/2 orange

Dry Ingredients

  • 2 cups bread flour
  • 2 tablespoons light brown sugar
  • 3/4 teaspoon kosher salt

Yeast and Fruit

  • 3/4 teaspoon instant yeast or bread machine yeast
  • 100 g Old English dried fruit mix

Instructions

  • Add the milk and softened butter to the bread machine pan.
  • Stir the cinnamon, cardamom, nutmeg, allspice, ginger, and orange zest, if using, into the milk mixture to hydrate the spices slightly.
  • Add the flour, brown sugar, and salt over the liquids.
  • Make a small well in the flour and add the yeast.
  • Select the Basic or White Bread cycle, 1-pound loaf size, and light crust. Begin the cycle.
  • Add the dried fruit at the mix-in signal, or 5 to 10 minutes into kneading if your machine does not signal.
  • Allow the cycle to finish fully. Remove the loaf promptly and cool completely before slicing.

Notes

  • This bread is designed specifically for toasting and buttering.
  • The restrained sugar keeps the loaf bread-like rather than cake-like.
  • Orange zest brightens the spice profile without making the loaf citrus-forward.
  • The best texture develops after full cooling. The loaf is excellent toasted the following day.

    Wonderful toasted with butter. The spice blend is subtle and the dried fruit doesn’t overwhelm the bread. This will definitely become part of our holiday breakfasts.
